Prepping Your Tomatoes
Slice 2 cups of cherry or grape tomatoes in half. (Make sure your tomatoes are ripe and fresh for best results.) Place them on a cookie sheet cut side up. Sprinkle with a pinch of coarse Kosher or Sea Salt.

Baking Your Tomatoes
Place your cookie sheet in a preheated 250 Degree Fahrenheit oven. Bake for 3 hours. Remove from oven when your tomatoes dry and allow them to cool to room temperature.

Storing Your Tomatoes
Place your tomatoes in container or jar. Add in fresh basil, oregano and cover in a high quality extra virgin olive oil. Store in the fridge for longest shelf life. These will stay fresh for around 2 weeks.
