Prepping Your Ingredients
Start by halving your cherry tomatoes and castlevetrano olives. Finely dice red onion and roasted red peppers.

Combining Your Ingredients
In a large mixing bowl combine tomatoes, olives, peperoncinis, red onion, mozzarella, roasted red peppers, and pine nuts. Mix well to evenly combine.

Finishing Touches
Squeeze in fresh lemon juice and pour in extra virgin olive oil. Season with dried oregano, salt and pepper. Finally, add in fresh basil. (You can chop the basil but fresh torn is more fragrant). Mix one last time and allow to chill for at least 1 hour in the refrigerator.
