Add your pasta into a pot, add just enough water to cover and season with a pinch of salt. Bring water to a boil while stirring constantly. Continue cooking until pasta is just shy of "al dente" and most of the water is absorbed. This should take around 5 minutes.
Immediately add in your evaporated milk (and cajun seasoning if desired) and bring to a boil. Lower heat to a simmer, add in grated cheese and stir constantly for about 2 minutes. Season to taste one last time and Enjoy!
