In a large mixing bowl combine your cream cheese, cheeses, mayo, pimentos, garlic powder, onion powder and cayenne pepper. Season to taste with salt and pepper. Mix the ingredients well. You can use an electric mixer to make this process easier!
Spread your pimento cheese evenly on 6 slices of white bread. (This recipe makes 6 sandwiches!) Top with the remaining 6 slices. Slice each sandwich diagonally and serve. Then it's time to Dig In!
