Prepping Your Breading Station
We’re using a 3 stage breading station: flour, egg, breadcrumbs. Pour your all purpose flour into one small tray. Scramble your 2 eggs with about a tablespoon of water in the second tray. Finally, pour your panko in the last tray.

Breading Your Shrimp
Pat your shrimp dry. Drop them into your flour and shake off the excess. Dredge your dusted shrimp in your egg slurry. Finally, evenly coat your shrimp in panko breadcrumbs.

Frying Your Shrimp
In a medium sauce pot, heat about 2 quarts of vegetable oil to around 350 degrees. (IMPORTANT TIP: When deep frying, make sure you only fill your pot halfway with oil. You need to account for displacement and bubbling.) Drop your shrimp into your hot oil a few at a time as to not crowd the pot. They should cook for around 7 minutes. When your shrimp are a deep, golden brown color, pull them out of the oil.

Cooling
Place your fried shrimp on a wire rack to drip off the excess oil. Season with sea salt immediately after removing shrimp from the oil.

Plating
Lay down a bed of arugula and place your fried shrimp on top. Drizzle with Alessi Italian-Asian Fusion Balsamic Reduction. Finish with toasted sesame seeds and sliced green onions.
